Vineyard

In Toro, there are very few plots where white grapes predominate, which is why La Jefa comes from a selection of numerous white vines found in old vineyards (from 50 to 150 years old), among the majority red grapes. They are planted on poor, sandy soils with a high granitic stony component and are cultivated naturally according to the traditional methods of Toro.

Harvest

The harvest began on September 16th and was carried out manually.

Winemaking

Minimal intervention winemaking. Maceration with the skins for 4 hours, gentle pressing, and static racking. Spontaneous fermentation with indigenous yeasts in new 600-liter French oak barrels, where it remains in contact with the fine lees.
