Harvest

Manual harvest carried out between September 24th and October 11th.

Production

Maceration for 14 days. Spontaneous fermentation in 15,000 kg concrete tanks with indigenous yeasts. Malolactic fermentation takes place in these same tanks. Wine with soft filtering and non-aggressive clarification to preserve its natural characteristics.
